Ingredients

  • 2 lbs minced chicken
  • 10 mini tortillas
  • Salt and pepper to taste
  • Oil for cooking
  • Caesar Dressing — 1 cup mayonnaise
  • Caesar Dressing — 2 tsp Dijon mustard
  • Caesar Dressing — Salt, to taste
  • Caesar Dressing — 3 tbsp olive oil
  • 1 tsp Worcestershire sauce — 2 tsp lemon juice
  • 1 tsp Worcestershire sauce — 2-3 cloves garlic, freshly minced
  • 1 tsp Worcestershire sauce — 1 tsp black pepper
  • 1 tsp Worcestershire sauce — Caesar Salad
  • 1 tsp Worcestershire sauce — 1 large romaine lettuce, diced
  • 1 tsp Worcestershire sauce — 1/3 cup parmesan cheese, shredded or shaved
  • 1 tsp Worcestershire sauce — 1 cup croutons

Instructions

  1. Prepare the Chicken
  2. Divide the minced chicken into 10 equal portions. Place 2-3 tablespoons of ground chicken in the center of each tortilla, pressing down gently to create an even layer. Sprinkle with salt and black pepper.
  3. Cook the Tacos: Heat a skillet over high heat with a small amount of oil. Place the tortillas, meat side down, in the skillet and cook over medium-low heat for 2-3 minutes or until cooked through. Flip the tacos and cook the other side until crispy and golden.
  4. Make the Caesar Dressing: In a bowl, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, garlic, salt, and black pepper. Slowly pour in olive oil while whisking until the dressing is smooth and emulsified.
  5. Assemble the Tacos: Once the tacos are cooked, top each taco with diced romaine lettuce, shaved parmesan cheese, and croutons. Drizzle the Caesar dressing over the top of each taco.
  6. Serve: Serve the Chicken Caesar Smash Tacos immediately and enjoy!
Tip: Leftovers keep 3 days in the fridge and reheat best in a skillet, not the microwave.
