Caramelized onion pasta

Ingredients

  • 2 tbsp butter
  • 2 tbsp oil
  • 2 large yellow onions, thinly sliced
  • 6 cloves fresh garlic, minced
  • Salt to taste
  • 1 tbsp chili oil (adjust to taste)
  • 1 cup unsweetened heavy whipping cream
  • 1 tsp soy sauce — 1/4 cup chicken stock
  • 1 tsp soy sauce — 1/2 tsp black pepper
  • 1 tsp soy sauce — 1 tbsp freshly chopped parsley
  • 1 tsp soy sauce — Squeeze of lemon juice
  • 1 tsp soy sauce — 1/2 Pasta water ( if needed )
  • 1 tsp soy sauce — 1/2 cup freshly grated Parmesan cheese
  • 1 tsp soy sauce — 8–10 oz pasta (spaghetti, fettuccine, or rigatoni work well)
  • 1 tsp soy sauce — Method: Bring apot of salted water to a boil. Cook the pasta according to the package instructions until it’s al dente.
  • 1 tsp soy sauce — Reserve half a cup of pasta water, then drain the pasta and set it aside.
  • 1 tsp soy sauce — Add the cooked pasta to the sauce and toss it well to coat. If the sauce is too thick, add a splash of the reserved pasta water.
  • 1 tsp soy sauce — Serve the pasta immediately, garnished with extra Parmesan and parsley on top.

Instructions

  1. In a large pan, heat butter and oil over medium-low heat.
  2. Add the sliced onions and a pinch of salt.
  3. Cook the onions slowly for 20-25 minutes, stirring occasionally, until they turn deep golden brown.
  4. Then, add the minced garlic and cook for another minute until it’s fragrant.
  5. Pour in the chicken stock and scrape the pan to release the browned bits. Add the heavy cream and soy sauce. Season with black pepper. Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
  6. Stir in the Parmesan cheese until it melts and becomes creamy. Add the lemon juice and parsley. Taste and adjust the salt if necessary.
Tip: Leftovers keep 3 days in the fridge and reheat best in a skillet, not the microwave.
