Caramelized onion garlic spaghetti

Bold, saucy caramelized onion garlic spaghetti that disappears from the pan before it reaches the table.

Ingredients

  • 2 tbsp butter
  • 2 tbsp oil
  • 2 medium yellow onion, finely sliced
  • 3 cloves fresh garlic, minced
  • 1 tbsp all purpose flour
  • Salt to taste
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp red chili flakes
  • 1/2 tsp red chili oil
  • 1 tbsp chili oil (adjust to taste)
  • 1 cup heavy whipping cream
  • 1 tsp Worcestershire sauce — 1/2 cup chicken stock
  • 1 tsp Worcestershire sauce — 1 tbsp freshly chopped parsley
  • 1 tsp Worcestershire sauce — Squeeze of lemon juice
  • 1 tsp Worcestershire sauce — 1/2 Pasta water ( if needed )
  • 1 tsp Worcestershire sauce — 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Worcestershire sauce — 8–10 oz pasta
  • 1 tsp Worcestershire sauce — Add the minced garlic and cook for 30–60 seconds, until fragrant.
  • 1 tsp Worcestershire sauce — Stir in the flour and cook for 1 minute, stirring constantly to remove the raw flour taste.
  • 1 tsp Worcestershire sauce — Add chili oil. Cook for another 30 seconds until fragrant.
  • 1 tsp Worcestershire sauce — Pour in the chicken stock, scraping up any browned bits from the bottom of the pan. Let it simmer for 1–2 minutes.
  • 1 tsp Worcestershire sauce — Stir in the Parmesan cheese until melted and creamy.
  • 1 tsp Worcestershire sauce — Add parsley, and lemon juice. Taste and adjust salt as needed.

Instructions

  1. Method: Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet or sauté pan, heat the butter and oil over medium-low heat. Add the diced onion and a pinch of salt. Cook slowly for 25–30 minutes, stirring occasionally, until the onions are deeply golden, soft, and caramelized.
  3. Stir in the heavy cream and soy sauce.
  4. Bring to a gentle simmer and cook for 3–4 minutes, stirring occasionally, until the sauce slightly thickens.
  5. Add in the garlic powder, onion powder, smoked paprika powder, red chili flakes and black pepper.
  6. Add the cooked spaghetti and toss until evenly coated. If needed, add reserved pasta water a little at a time until the sauce reaches your desired consistency.
Tip: Taste the sauce before assembling and adjust the salt then, not after.
