Caramelized onion garlic spaghetti
Bold, saucy caramelized onion garlic spaghetti that disappears from the pan before it reaches the table.

Ingredients
- 2 tbsp butter
- 2 tbsp oil
- 2 medium yellow onion, finely sliced
- 3 cloves fresh garlic, minced
- 1 tbsp all purpose flour
- Salt to taste
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp red chili flakes
- 1/2 tsp red chili oil
- 1 tbsp chili oil (adjust to taste)
- 1 cup heavy whipping cream
- 1 tsp Worcestershire sauce — 1/2 cup chicken stock
- 1 tsp Worcestershire sauce — 1 tbsp freshly chopped parsley
- 1 tsp Worcestershire sauce — Squeeze of lemon juice
- 1 tsp Worcestershire sauce — 1/2 Pasta water ( if needed )
- 1 tsp Worcestershire sauce — 1/2 cup freshly grated Parmesan cheese
- 1 tsp Worcestershire sauce — 8–10 oz pasta
- 1 tsp Worcestershire sauce — Add the minced garlic and cook for 30–60 seconds, until fragrant.
- 1 tsp Worcestershire sauce — Stir in the flour and cook for 1 minute, stirring constantly to remove the raw flour taste.
- 1 tsp Worcestershire sauce — Add chili oil. Cook for another 30 seconds until fragrant.
- 1 tsp Worcestershire sauce — Pour in the chicken stock, scraping up any browned bits from the bottom of the pan. Let it simmer for 1–2 minutes.
- 1 tsp Worcestershire sauce — Stir in the Parmesan cheese until melted and creamy.
- 1 tsp Worcestershire sauce — Add parsley, and lemon juice. Taste and adjust salt as needed.
Instructions
- Method: Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet or sauté pan, heat the butter and oil over medium-low heat. Add the diced onion and a pinch of salt. Cook slowly for 25–30 minutes, stirring occasionally, until the onions are deeply golden, soft, and caramelized.
- Stir in the heavy cream and soy sauce.
- Bring to a gentle simmer and cook for 3–4 minutes, stirring occasionally, until the sauce slightly thickens.
- Add in the garlic powder, onion powder, smoked paprika powder, red chili flakes and black pepper.
- Add the cooked spaghetti and toss until evenly coated. If needed, add reserved pasta water a little at a time until the sauce reaches your desired consistency.
Tip: Taste the sauce before assembling and adjust the salt then, not after.
