How to Thicken a thin sauce (Rescue in Minutes)
Dinner is on the line and something went sideways. Deep breath — this is fixable, usually in under five minutes.
The rescue, in order
- Fastest: cornstarch slurry — 1 tbsp cornstarch + 2 tbsp cold water, whisk in, simmer 1 minute.
- Richest: beurre manié — knead equal butter and flour, whisk in bits into the simmering sauce.
- Most flavor: just reduce — wide pan, medium-high, 5–10 minutes uncovered.
- Cream sauces: a handful of parmesan both thickens and seasons.
Why this works
Starches swell and trap water; reduction removes it; cheese adds emulsified proteins — three roads to the same cling.
So it never happens again
Slurry must be cold water first — cornstarch straight into hot liquid means lumps forever.
