How to Fix seized chocolate (Rescue in Minutes)
Dinner is on the line and something went sideways. Deep breath — this is fixable, usually in under five minutes.
The rescue, in order
- Whisk in warm water or cream one teaspoon at a time — it loosens back to glossy.
- Keep it moving over the gentlest heat; stop the moment it flows.
- Seized-and-rescued chocolate is for sauces, ganache and baking — its tempering is gone, so no candy coating.
Why this works
A drop of water makes melted chocolate clump; paradoxically, enough liquid dissolves the sugar network back to smooth.

Prevention: bone-dry bowls and utensils, and melt in 20-second microwave bursts at 50%, stirring between.
